I hope that you enjoy this cozy November weekend.
One of the things which makes me feel cozy and relaxing is baking. Sometimes after a tough day, I go home, start baking and it feels like the best therapy to me. My way of cooking is to improvise. But this technique doesnβt work well with baking. At least not before you master the basics. After I had a baking lesson, I feel a bit more secure to add my one touch in the recipes. Here is one complete improvisation which, according to my husband opinion was the best muffins I have ever done π And here I have to say – he doesnβt really like muffins…
Ingredients:
5tbs carob powder
5tbs coconut flour
7-8tbs coconut flakes
3tbs coconut sugar
2/3 can coconut milk
2tbs coconut butter
2tbs butter
1ts baking powder
1ts vanilla extract
40g chopped dark chocolate (I used 74%)
2 eggs
1 pinch of salt
How to prepare it?
Stir well the eggs and the coconut sugar. Add of the other wet ingredients.
Mix well in a separate bowl all the dry ingredients. Combine the wet and the dry ingredients. Finally, add the chopped chocolate and stir gently. Bake in a preheated oven for 22-25 minutes.
