Wild forest mushrooms

Hi, everyone πŸ™‚

It’s been really rainy in Bulgaria lately and that’s why I have decided to cook with forest mushrooms this week. More specifically – with fresh Porcini mushrooms πŸ™‚

The Porcini mushrooms haven’t been cultivated yet, that’s why you can’t find them fresh easily. They are low in calories and fats and contain vegetable proteins and dietary fibers. They are an excellent source of Niacin and a good source of Potassium and Selenium. Thanks to its nutritional elements, the Porcini mushrooms may prevent from kidney stones, strokes and multiple sclerosis. They add a rich flavour to the meals and they are healthy πŸ™‚ That’s why I would suggest to use them when we find them πŸ™‚

Our hero this week is one of the most delicious fruits – the Strawberries πŸ™‚

The Strawberries are low in calories (32 calories per 100 g) and very low in fats. They are an excellent source of Dietary fibers, Vitamin C, Folate and Manganese. They are also a good source of Vitamin K, B6, Niacin, Magnesium, Potassium, Copper, Iron, Omega 3 and Omega 6 fatty acid. All these vitamins and minerals which the Strawberries contain, make them a super food.
The Strawberries are an excellent antioxidant. They help controlling the blood pressure and help the heart health. They also help the red blood cells formation and have anti-cancer benefits. The Strawberry intake decreases the risk of diabet and stimulates the body methabolism. The Strawberries have anti-inflammatory effect and may help to alleviate symptoms of allergies. They also increase the serotonin production in the body which helps preventing and fighting the depression and makes us happier πŸ™‚

Einkorn (Π›ΠΈΠΌΠ΅Ρ†)

Our new hero of the week is considered for one of the oldest wheats in the world and the earliest cultivated ones – The Einkorn πŸ™‚

The Einkorn is an ancient wheat, originally from southeast Turkey. It is the earlist cultivated wheat in my country, Bulgaria, too. The Einkorn belongs to the Poaceae family and has high nutritious value. It is low in fats and high in carbohydrates and proteins. The Einkorn provides more proteins than any other wheat. It is an excellent source of Vitamin A, Riboflavin, Magnesium, Potassium, Phosphorus, Dietary fibers, Carotenoids and a good source of Natrium, Calcium and Zink. Thanks to all this, the Einkorn has numerous of health benefits. It is an excellent antioxidant and prevents from cancer. It is heart friendly and has better digestion than any other wheat. It helps our eyes health and lowers the aging of the cells. The Einkorn has benefits also with patiens who have diabet because it improves the insulin sensitivity. It is very low in gluten and over 70% of gluten intollerant patiens eat it.
The Einkorn is an ancient grain and the purest wheat as it only has two sets of chromosomes, unlikely the modern wheats which have six.

This week’s hero is an aromatic root herb, which is commonly used for cooking and for medical reasons. Yes, you guessed right – I am talking about the Ginger πŸ™‚
It is originally from Asia and belongs to the Zingiberaceae family.
The Ginger is very low in calories (80 calories per 100 g) and very low in fats. It is an excellent source of Pyridoxine, Vitamin C, Potassium, Copper, Magnesium and Manganese. The Ginger is also a good source of Dietary fiber, Niacin, Pantothenic acid, Iron and Phosphorus.
Thanks to all vitamins and minerals which contains, the Ginger has numerous of health benefits and is comminly used in medicin.
It helps controlling the blood presure and the blood cholesterol. It is an excellent anti-oxidant and may prevent cancer. It also induces cell death in cancer cells. The Ginger root has anti-inflammatory and anti-microbial effects. It has gastrointestinal reliefing effect and reduces the symptoms of motion sickness such as nausea, vomiting and dizziness. It brings relief of nausea and vomiting even during pregnancy. The Ginger helps against cold, cough and flu. It is also known as a good painkiller – it helps against migraine headache and even against menstruation pain. A study has shown that the Ginger reduces the pain and improves the mobility of patients with Arthritis diseases.

Pasta salads

Hi, everyone πŸ™‚

This week we won’t talk about a concrete product. We will prepare pasta salads πŸ™‚
Usually when we think of pasta, we imagine a delicious warm main dish. But now we are going to change this πŸ™‚
The pasta salads are always super easy and don’t take long time to prepare, they are light, delicious and great for lunch in a box, dinner or brunch πŸ™‚
I got as a Christmas present from the most special person to me an amazing book – “All about Pasta”. He always knows how to surprise me πŸ™‚ I got inspired by the book and have decided to dedicate this week to the Pasta salads πŸ™‚
Here we won’t talk about the origin of the pasta, its history, its types and so on. We will leave this for another time. But I will share with you few advices about preparing an amazing pasta salad and few favourite recipes of mine.
You should remember these simple rouls:
– buy a good quality pasta (or prepare it yourself)
– salt the water after it starts boiling
– boil the pasta according to the instruction on the pack (not even a minute more)
– after straining the pasta, add into it high quality olive oil (don’t add it into the water while boiling)
– use your imagination for preparing and decorating the salads πŸ™‚

The Chickpeas are also known as Garbanzo beans and are a common type of legume. They belong to the Fabaceae family and are one of the earliest cultivated legumes. Originally they come from the Middle East and are commonly used in the cuisines of the Middle East countries.

The Chickpeas are an excellent source of Dietary fibers, Protein, Thiamin, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese. The Dried porcini mushrooms are high in calories (105 calories per serving portion of 28 g) and they are fat-free. They are an excellent source of dietary fibers and a good source of proteins and Iron. The Porcini mushrooms are also known as Boletus edulis and belong to the Boletaceae family. Chorizo (Π§ΠΎΡ€ΠΈΠ·ΠΎ)

Hi, everyone πŸ™‚

This week’s hero is a typical Spanish/Mexican sausage – the Chorizo πŸ™‚

The Chorizo is basically a sausage made by chopped pork meat, formed in an intestine. There are many varieties of Chorizo – it can be seasoned with different herbs and spicies, depending on the region where it is made. Usually the Mexican Chorizo is much more piquant – instead of paprika, they use dried hot peppers.
There are two main types of Chorizo – the first one is ready to be eaten without cooking (salami type). This special salami has found its place in every Spanish tapas bar πŸ™‚ The second one is raw and has to be cooked before eating. This second type is used in different recipes – with rice, potatoes, bean, eggs etc.
This week we will prepare two delicious Spanish/Mexican recipes with Chorizo πŸ™‚

Beetroot (Π§Π΅Ρ€Π²Π΅Π½ΠΎ Ρ†Π²Π΅ΠΊΠ»ΠΎ)

Our new hero of the week is a super healthy and delicious red winter vegetable. Yes, you guessed right, I am talking about the Beetroot πŸ™‚

This root vegetable belongs to the Amarathaceae family. It is low in calories (45 per 100 g) and very low in fats. It contains a lot of essential vitamin and minerals. The Beetroot is an excellent source of Vitamin C, Folate, Potassium, Manganese and Dietary fibers. It is also a good source of Vitamin A, Thiamin, Riboflavin, Niacin, Vitamin B6, Panthothenic acid, Iron, Magnesium and Copper. Thanks to all these we said above, The Beetroot has a lot of health benefits. The red root vegetable lowers the blood presure and prevents from cardio vascular diseases. It helps the fight against cancer, especially colon cancer. It is an amazing antioxidant, it is essential for the body detoxification and offers anti-inflammatory benefits. The Folates in the Beetroot helps the DNA synthesis within the cells and prevent neural tube defects in the baby. The Beetroots stimulates our metabolism, helps against depression and relaxes our mind.
And one big plus – it is also a natural aphrodisiac.
